Thai Cucumber Salad

Light and crunchy, this salad is a refreshing dish to serve on a hot day, or with spicy food. It may be made one day in advance.

6 Kirby cucumbers or other unwaxed varieties
1 red bell pepper
2 limes, juiced
4 green onions (scallions), chopped
2 Tablespoons chopped cilantro leaves
2 Tablespoons light agave, or similar

Combine all the ingredients in a bowl, toss. Cover and chill until serving time.
